Leading the bar program is Bar Manager Johan Luque, whose background in hospitality and mixology brings a thoughtful and creative approach to the Omotenashi experience. With years of experience behind the bar, Johan focuses on balance, technique, and storytelling through cocktails — creating drinks that are both refined and memorable.
His program is built on precision and restraint. Seasonal ingredients guide each menu, house-made components are folded in with intention, and every pour carries the same care as the food served at the main counter.
